Cheddar cheese gives an added richness and tang to homemade cream of mushroom soup. This soup is quite filling on its own, but if you want to make it a meal, add some diced cooked chicken or turkey and steamed broccoli.

4       Tbsp. Butter

1       lb. Mixed Mushrooms (portabella, oyster,  shiitake, cremini, enoki, etc., sliced thick)

1/2    Medium Sweet Onion (sliced 1/2 inch thick)

5       Cloves Garlic (minced)

1       tsp. Kosher Salt

3       Tbsp. All-purpose Flour

1-3/4 Cups Chicken or Vegetable Broth

1       Cup Cream, Half-and-half, or Milk

1/8    tsp. Nutmeg

         Freshly Ground Pepper (to taste)

1       Cup Cheddar Cheese (finely grated)

In a heavy saucepan, gently sauté  mushrooms, onions, garlic, and salt in the butter until mushrooms have released their liquid and onions are soft. Sprinkle with the flour and stir for 1 minute. Add chicken broth while stirring. Bring to a low boil and simmer for 10 minutes. Stir in cream and return to a simmer. Add Cheddar cheese and stir until melted. Season with freshly ground pepper to taste. Remove from heat and serve. Yield: 4 servings

"My grandmother's recipe for roasted chicken. I have NO idea why the combination of these ingredients or this cooking method yields such a wonderfully TASTY bird...but it does!"

1    (3 lb.) Whole Chicken (giblets removed)

Salt and Black Pepper (to taste)

1    Tbsp. Onion Powder (to taste)

1/2 Cup Butter (divided)

1    Stalk Celery (leaves removed)

Preheat oven to 350 degrees F.

Place chicken in a roasting pan, and season generously inside and out with salt and pepper. Sprinkle inside and out with onion powder. Place 3 tablespoons butter in the chicken cavity. Arrange dollops of the remaining butter around the chicken's exterior. Cut the celery into 3 or 4 pieces, and place in the chicken cavity

Bake uncovered 1 hour and 15 minutes in the preheated oven, to a minimum internal temperature of 180 degrees F. Remove from heat, and baste with melted butter and drippings. Cover with aluminum foil, and allow to rest about 30 minutes before serving. Servings:

Cut your lunch sandwiches into hearts. You also can make heart-shaped cupcakes by placing a marble inside each muffin tin, on the outside of the filled paper cupcake cup.

Reshape pre-made pizza dough and cut pepperoni slices into heart shapes and do a homemade Valentine Pizza.

Make a valentine soda. The ingredients required are: Sprite, strawberry ice cream, strawberry preserves and whipped cream.

Pour sprite into a large glass, add a scoop of strawberry ice cream to it. Enhance it by gently mixing a little strawberry preserves with whipped cream to do the topping.
